Not to be confused with vine peppers, Sichuan peppercorns are the dried fruit of the prickly ash tree. Native to Sichuan, a province in the southwest of China close to Tibet, these peppercorns has a unique aroma that is warm and peppery with slight lemony overtones. Tasting both tangy and peppery it leaves the mouth with a tingly, fizzy numbness.

Found in the Chinese five spice and Japanese shichimi togarashi blends, its sharp, tangy flavour makes it an ideal accompaniment to rich and fatty foods such as pork and roast duck: Peking duck gets much of its unique taste from Sichuan pepper. We suggest dry roasting the Sichuan husks before use to enhance its taste. For an interesting flavour experience, grind the husks, mix with a little salt and add to quail or other game prior to roasting.
