Cumin has a warm, spicy, pungent aroma and a slightly bitter, earthy taste most readily associated with curries. Native to the Middle East, the cumin seed is the dried fruit of the cumin plant, which is a member of the parsley family.

Cumin is used extensively in Indian curries; it is included in vegetables dishes, rice, breads, pickles and chutneys and features in spice blends such as baharat, ras el hanout and garam masala. Cumin goes especially well with meat, especially lamb, and in beef dishes like chilli con carne. Cumin seeds are often dry roasted before use to bring out a slight nuttiness while damping down their bitterness.
