In the Middle East, India and the tropics, where mangoes are plentiful, the unripe fruit is dried and ground to produce amchoor, a spice of sour character. The name amchoor comes from the Hindi for “mango” am, and choor meaning powder.

Vegetarian cuisine in India uses Amchoor to add brightness to root vegetables and curries. It is also a meat tenderizer and works well in marinades with other spices such as star anise, pepper, ginger, coriander and cumin.
