Christmas spiced biscuits made with organic mixed spice blend

This is a really easy recipe and results in some delicious biscuits to serve at a party, give as a gift, or even hang on your Christmas tree.  We’ve used our organic mixed spice to flavour the biscuits, but you can replace it with ground ginger and cinnamon if you prefer gingerbread men to spice men! – The number of biscuits you will get depends on the shape and size of your cookie cutters.

  • 350g plain flour, plus extra for rolling out
  • 1 tsp bicarbonate of soda
  • 1 tbsp Pinch Organic Mixed Spice
  • 125g cold butter, cubed
  • 175g light soft brown sugar
  • 1 egg
  • 4 tbsp golden syrup

Sift the flour, bicarbonate of soda and mixed spice together in a mixing bowl. Add the butter and, working quickly; rub together with your fingers until the mixture resembles breadcrumbs. Stir in the sugar. Blend the egg and golden syrup together and mix until the mixture comes together. Tip the dough out onto a floured surface and knead lightly. Wrap the dough in clingfilm and leave it in the fridge for at least 15 mins. When ready to bake, pre-heat the oven to 180°C, gas mark 7 and line a baking tray with parchment or greaseproof paper. Roll out the dough on a floured surface until it is roughly 0.5cm thick. Use cookie cutters to create different shaped biscuits. Lay them on the baking tray, making sure to leave space between them. If you want to hang your biscuits on the Christmas tree, make sure to make a hole in the dough for your string or ribbon at this stage. Bake for 10-12 minutes, or until lightly golden brown. Transfer to a wire rack to cool completely, then decorate with writing icing. Seasonings Greetings!
