Description & Use: Za’atar is the name of a herb native to the Middle East, similar to thyme, marjoram and oregano. Za’atar is also the name for a popular blend of herbs with other ingredients including salt, sumac and sesame seeds that is popular across the Middle East as well as North Africa. The recipe differs from country to country and even from region to region. It can be eaten quite simply as a dip for pitta bread and olive oil, and the blend is sprinkled over the dough before baking to make a popular flatbread, manakeesh.
Our za’atar brings together thyme, oregano and marjoram with sumac, toasted sesame seeds and salt. The salt used in this blend is our hand-harvested French sel gris which is finely ground and dried but is otherwise untreated. This blend is a great seasoning for green salads, or with feta cheese in a Greek salad. Sprinkle some over olives that have been warmed slightly with olive oil or add to chicken before roasting.
