Description & Use: The word peri peri comes from the Swahili word Piri Piri which stands for pepper/spicy chilli. This famous Portuguese spice marinade and condiment is perfect when roasting, BBQ’ing or grilling chicken. This blend became a favourite of Portuguese cooks following the importation of the fiery small chillies began from the African Portuguese colonies of Angola and Mozambique.
Our organic peri peri spice rub is the result of thorough research, testing and enjoyable tasting sessions in our kitchen. To make our peri peri blend we roast and grind organic peppercorns, cardamon pods and lots of fiery birds eye chilli peppers to this we add organic oregano, garlic, paprika, ginger and cinnamon and finally heaps of ground bay leaves. This rub is amongst the hottest of our blends and we recommend that it is best used as the base of a marinade basting sauce. A basic marinade can be made by adding 2 to 4 teaspoons of our peri peri spice rub to the juice of a lemon and a 75/25 blend of olive oil and vinegar.
All Pinch spice blends are hand-blended in small batches in our own kitchen.
