Gros Sel Gris de Guérande

Our gros sel gris is hand-harvested by Lionel Charteau, who has been a paludier – literally one who works in the marshes – in Guérande, north-east France for over fifteen years. Salt harvesting in the region dates back to the 9th century. Lionel supplies salt to Michelin three-starred chefs Michel Troisgros, Alain Passard, and Michel Bras.

Seawater trapped in the marshes evaporates to produce a coarse sea salt that is harvested and sifted by hand but not otherwise treated. Unlike fleur de sel which forms on the top of the water, gros sel gris comes in contact with the bottom of the salt pan, as a result of which it retains a pale greyish colour. Gros sel gris is coarser than fleur de sel but also retains a high moisture content which means it can be used as a finishing salt, though it is best used in cooking. It is a particularly effective ingredient for cooking bream or sea bass in a salt crust to retain moisture in the fish.
