The fenugreek plant is native to western Asia and southern Europe and is one of the oldest cultivated plants, dating as far back as 1000 BC: the Egyptians used it for its medicinal properties and as a digestive aid. Fenugreek seeds have a slightly bitter taste and upon roasting they take on a nutty, maple-like flavour.
Today Fenugreek seeds are often ground and included in curry spices, where they bring a distinct sharpness and slightly bitter taste to vindaloo dishes. We suggest that you use fenugreek seeds with caution as their strong flavour can easily overwhelm dishes.
