Mulled cranberry sauce

There’s nothing more impressive than serving homemade cranberry sauce on Christmas day – or even better, presenting a jar of it to your Christmas Day host or hostess.  Some like to flavour their cranberry sauce with port or orange rind but at Pinch Towers, we add a sachet of our organic mulling spice (star anise, cloves, cinnamon, cardamom and allspice) to the pot to bring an extra taste of Christmas.



Add the orange juice and sugar to a pan and stir over a medium heat until most of the sugar dissolves.  Add the cranberries and the spice sachet, bring slowly to a simmering point, and cook until most of the cranberries have popped – which will only take a few minutes so don’t wander off!  Squash some of the cranberries, and leave others whole depending on the texture you want, noting that the sauce will set further as it cools.

Discard the spice sachet and transfer to an airtight container or a sterilised jar to cool.
