De arbol chillies are a favourite in Mexican cooking especially in western Mexico where they are also known as “pico de pajaro” (bird beak) or “cola de rata” (rat tail) because of their long, thin shape. Considered a fairly hot chilli they have a bold, natural, grassy flavour with a hint of nuttiness. In their dried form they retain an attractive rich deep red colour.
Use in stews and soups, sprinkle on pizza, use them to add a kick to your burgers or as a general seasoning to sprinkle over food. Crushed chillies mixed with peppercorns are great for those wishing to experiment with making their own spiced pepper oils.
