Chipotles are smoked jalapeno chillies and are used extensively in Mexican and Tex-Mex cooking. The smoking process takes up to four days to complete and during this time the jalapenos are stirred every three or four hours to ensure the wood fire smoke penetrates the whole chilli. There are two main types of the chipotle, the ‘morita’ and the superior ‘meco’ variety. The ‘meco’ variety that we stock are smoked for longer resulting in a smokier and richer flavour while retaining the heat of the jalapeno.
Use in stews and soups, sprinkle on pizza, use them to add a smoky, barbeque kick to your burgers or as a general seasoning to sprinkle over food. Crushed chillies mixed with peppercorns are also great for those wishing to experiment with making their own spiced pepper oils.
